  • Author: anna
  • Total Time: 37 minutes
  • Yield: 20 servings 1x
  • Diet: Vegetarian

Description

These creamy and luscious avocado truffles combine rich semi-sweet chocolate with ripe avocado to create a healthier, dairy-free treat. Coated with cocoa powder or chopped pistachios, these bite-sized delights offer a perfect balance of chocolatey flavor and smooth texture, making them an ideal guilt-free indulgence for any occasion.

Ingredients

Scale

Chocolate Base

  • 12 ounces semi sweet chocolate chips (preferably Ghiradelli)
  • 1 tablespoon coconut oil (or butter)

Avocado Mixture

  • 1 large ripe avocado (about 3/4 cup mashed)
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Coating

  • Cocoa powder or minced pistachios, for rolling

Instructions

  1. Melt the Chocolate: Place the chocolate chips and coconut oil in a medium microwave-safe bowl. Microwave in 30-second increments, stirring after each session, for 2 to 3 minutes until the mixture is completely melted and smooth.
  2. Mash the Avocado: Thoroughly mash the ripe avocado until it reaches a smooth, lump-free consistency to ensure it blends evenly with the chocolate.
  3. Combine Ingredients: Add the mashed avocado, cocoa powder, vanilla extract, and salt into the melted chocolate. Stir well until all ingredients are fully combined into a homogeneous mixture.
  4. Chill to Firm: Allow the mixture to rest at room temperature until it firms enough to handle. To expedite, refrigerate for 15 to 30 minutes until it thickens but remains pliable.
  5. Scoop and Roll: Using a tablespoon measure, scoop portions of the mixture. Roll each into a smooth ball gently between your palms to form uniform truffles.
  6. Coat the Truffles: Roll each truffle in cocoa powder or minced pistachios (whichever you prefer) to coat evenly, adding texture and flavor.
  7. Set the Truffles: Arrange the coated truffles on a sheet pan and chill in the refrigerator until firm. Once firm, transfer the truffles to an airtight container for storage.
  8. Serve: Keep the truffles refrigerated until serving. Before enjoying, let them sit at room temperature for about 15 minutes to soften slightly for optimal taste and texture.

Notes

  • For best results, use a ripe but firm avocado to avoid excess moisture in the truffles.
  • You can substitute coconut oil with butter if not avoiding dairy.
  • Storage: Keep truffles refrigerated and consume within 1 week for freshness.
  • Feel free to experiment with coatings like shredded coconut or chopped nuts for different flavors.
  • If mixture is too soft to roll, chill longer until it firms up.
