  • 8 ounces grape tomatoes, halved
  • 8 ounces fresh mozzarella balls (ciliegine or pearls)

Chicken

  • 2 pounds boneless, skinless chicken breasts, pounded to even thickness
  • 2 tablespoons avocado oil or other high-heat oil
  • Kosher salt and fresh black pepper, to taste

Instructions

  1. Prepare the Sauce: In a bowl, whisk together the balsamic vinegar, honey, oil, minced garlic, Italian seasoning, and Dijon mustard. Season with kosher salt and black pepper to taste. Set aside.
  2. Mix Tomatoes and Mozzarella: In a separate bowl, combine the halved grape tomatoes, fresh mozzarella balls, and finely chopped basil. Season with salt and pepper to taste and set aside.
  3. Preheat the Oven: Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius) to ensure it’s ready for baking the chicken later.
  4. Sear the Chicken: Heat 2 tablespoons of avocado oil in a large oven-safe skillet over medium-high heat. Season both sides of the chicken breasts with salt and pepper. When the oil is shimmering and the pan hot, add the chicken in a single layer. Sear each side for 1-2 minutes until lightly golden brown.
