  • 15 ounces tomato sauce
  • 1 cup chicken stock
  • 2 cloves garlic, minced

For Enchilada Filling:

  • 1 pound ground beef or chicken
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small yellow onion, diced
  • 4.5 ounces diced green chiles
  • 15 ounces black beans, drained and rinsed
  • 12 corn tortillas (6 inches)
  • 3 cups shredded colby jack cheese

Instructions

  1. Preheat oven and prepare baking dish: Preheat the oven to 350°F. Spray a 9×13-inch baking dish with cooking spray.
  2. Make Enchilada Sauce: In a skillet, sauté onion with salt until translucent. Add cumin, chili powder, flour, chicken stock, tomato sauce, and garlic. Simmer for 5 minutes.
  3. Prepare Enchilada Filling: Cook ground beef or chicken with onions, salt, and pepper until browned. Add green chiles and black beans.
  4. Layer Casserole: Pour some enchilada sauce in the baking dish. Layer tortillas, beef mixture, and cheese. Repeat with remaining ingredients.
  5. Bake: Bake uncovered for 20 minutes until cheese is melted and bubbly.
