Instructions

  1. Cook the Beef Mixture: In a sauté pan over medium heat, cook the lean ground beef while breaking it apart with a spatula until no longer pink. Add the taco seasoning and 1/4 cup water (or beef broth), stirring to combine. Cook for an additional minute. Stir in the refried beans to the mixture; if it becomes too thick, add a bit more water to reach your desired consistency.
  2. Prepare the Rice and Tortillas: Cook your Mexican rice if using instant rice or warm any leftover rice. Heat the burrito-sized flour tortillas in the microwave for about 30 seconds until soft and pliable.
  3. Assemble the Burritos: Lay a heated tortilla flat on a clean surface. Spoon a couple of tablespoons of the beef and bean mixture into the center of the tortilla, followed by a couple of tablespoons of rice on top. Add a layer of Fritos or Doritos for crunch, then a generous spoonful of warmed cheese dip. Sprinkle shredded Mexican cheese blend over the top, and add a spoonful of sour cream.
