- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3–4 medium bananas (or 2 large bananas)
- 1 tsp vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350 degrees and line two 8×4 bread pans with parchment paper or grease with butter.
- Mash the bananas: In a medium bowl, mash the bananas with a fork until well mashed. Set aside.
- Cream butter and sugar: In a separate bowl, cream the butter and sugar together.
- Add eggs: Add eggs to the butter-sugar mixture and cream until combined.
- Combine dry ingredients: Add flour, baking soda, and salt to the mixture and mix well.
- Incorporate bananas: Add mashed bananas and vanilla extract to the batter and mix until combined.
- Bake: Divide the batter between the pans and bake for 35-40 minutes until a tester comes out clean.
- Cool and serve: Allow the bread to cool in the pans for 5-10 minutes, then remove and cool on a wire rack. Serve warm, at room temperature, or chilled.
