Instructions

  1. Make the batter: In a large bowl, combine the all-purpose flour, baking powder, salt, and sugar. Create a well in the center of the dry ingredients. Pour in the milk, egg, melted butter, and vanilla extract. Use a fork to break up the egg, mix it with the liquid ingredients, then gradually incorporate the dry ingredients from the outside of the bowl inward. Mix just until most of the flour disappears and the batter becomes mostly smooth. Avoid overmixing to prevent tough pancakes.
  2. Heat the cooking surface: Preheat a non-stick griddle or large skillet over medium heat. If you’re using an electric griddle, set it between 300°F and 350°F. Lightly grease the surface with butter, oil, or spray. Be sure butter doesn’t brown, as that means the surface is too hot.
