For the Taco Seasoning

  • 2 teaspoons chili powder

  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

For the Soup

  • 2 pounds 85/15 ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 oz cream cheese, softened
  • 1/2 cup fresh cilantro, chopped
  • 2 cans (10 oz each) Rotel with green chiles
  • 4 cups beef broth
  • Optional toppings: shredded cheese, jalapeño slices, avocado chunks

Instructions

  1. Make the taco seasoning: In a small bowl, combine chili powder, garlic powder, cumin, onion powder, dried oregano, paprika, salt, and pepper. Alternatively, use 2 tablespoons of a premade taco seasoning blend.
  2. Cook the beef and aromatics: In a skillet over medium heat, crumble and cook the ground beef along with diced onion and minced garlic. Cook until beef is browned and onions are softened. Drain excess grease from the pan.
  3. Add seasonings and cream cheese: Reduce heat to low, stir in the taco seasoning, then add the softened cream cheese. Stir continuously until the cream cheese melts into the beef mixture, creating a creamy seasoned base.
  4. Transfer to slow cooker: Pour the seasoned beef mixture into the slow cooker. Add chopped cilantro, both cans of Rotel, and beef broth. Stir gently until well combined.
  5. Cook the soup: Cover and set the slow cooker on low for 4 hours or high for 2 hours, allowing flavors to meld and soup to heat thoroughly.

Notes

  • For a quicker version, this soup can also be made in an Instant Pot by sautéing the beef, onion, and garlic, then adding the seasonings, cream cheese, broth, and Rotel. Cook on Soup mode for 5 minutes and allow natural pressure release for 5 minutes.
  • The recipe uses 85/15 ground beef for a good balance of flavor and fat, but 80/20 or 75/25 can be substituted if preferred.
  • If you prefer milder flavor for kids, use mild Rotel or substitute one can with fire-roasted tomatoes.
  • Use an onion chopper to speed up prep time.
