Graham Cracker Crust:
- 1 sleeve graham crackers (9 sheets)
- 1 cup pecans
- ½ cup butter (1 stick), melted
- 2 Tbsp granulated sugar
Cheesecake Layer:
- 8 oz cream cheese, room temperature
- 1 cup powdered sugar
- 16 oz whipped topping (two 8oz tubs), thawed & divided
Blueberry Topping:
- 42 oz blueberry pie filling (two 21oz/595g cans)
- 2 Tbsp chopped pecans (for garnish, optional)
Instructions
- Preheat Oven: Preheat the oven to 350 degrees Fahrenheit.
- Prepare Crust: In a food processor or blender, blend graham crackers and pecans into fine crumbs. Add melted butter and granulated sugar, mix to coat, and press into a 13×9-inch pan. Bake at 350˚F for 8-10 minutes until set. Cool completely.
- Make Cheesecake Layer: Using an electric mixer, beat cream cheese and powdered sugar until smooth. Fold in one container of whipped topping. Spread over the cooled crust.
- Add Blueberry Topping: Gently spread blueberry pie filling over the cream cheese layer. Top with the remaining whipped topping. Sprinkle with chopped pecans if desired.
- Chill and Serve: Cover and refrigerate for at least 2 hours or overnight. Cut into 15 pieces and enjoy chilled.
