Ingredients

Scale

Dough:

  • 1 cup warm water
  • 1/3 cup buttermilk
  • 1/2 Tbsp sour cream
  • 1 large egg
  • 1 tsp salt
  • 4 cups all-purpose (unbleached) flour

Filling:

  • 1 lb blueberries
  • 1/3 cup sugar, plus more for sprinkling

Instructions

  1. Prepare the Dough: In a mixer, combine warm water, buttermilk, sour cream, egg, and salt. Slowly add flour until a soft, elastic dough forms. Knead for 15 minutes.
  2. Roll Out the Dough: Divide the dough, roll it thin, and cut into circles.
  3. Fill the Pierogi: Place sugar and blueberries on each circle, fold, and seal.
  4. Cook the Pierogi: Boil in salted water until they float, then drain.
  5. Finish and Serve: Drizzle sugar between layers, and serve warm with sour cream.

Notes

  • For a variation, you can also sauté the pierogi in butter after boiling for a crispy texture.
  • These pierogi freeze well; just boil and then freeze in a single layer on a baking sheet before transferring to a freezer bag.
