Instructions
- Preparation: Preheat your oven to 325°F (160°C). Pat the beef roast dry with paper towels and season generously with salt and pepper all over.
- Searing the Roast: In a large oven-safe pot, heat a tablespoon of oil over medium-high heat. Sear the roast on all sides until it develops a golden brown crust, about 3-4 minutes per side. This step locks in the flavors and juices.
- Sauté Onions: Remove the roast and set it aside. In the same pot, add the sliced onions and sauté for 5-7 minutes until they soften and begin to caramelize, bringing out their natural sweetness.
- Add Soup Mix and Broth: Stir in the French onion soup mix and beef broth, scraping the bottom of the pot to lift the browned bits. This adds depth and richness to the sauce.
- Braise the Roast: Return the beef roast to the pot, cover it with a lid, and transfer the pot to the preheated oven. Let the roast braise gently for 3-4 hours, or until the meat is fork-tender and easily pulls apart.
- Rest and Serve: Optionally add fresh thyme on top. Remove the pot from the oven and let the roast rest for 10-15 minutes before slicing. This resting enhances juiciness and flavor retention.
