Instructions
- Cook Quinoa: Prepare quinoa according to package directions using your preferred method on the stovetop, in a rice cooker, or Instant Pot until fluffy and fully cooked. Set aside to cool slightly.
- Steam Broccoli: Pour ½ inch of water into a pot or pan and bring it to a simmer. Add broccoli florets, cover, and steam for 3-5 minutes until the broccoli is bright green and tender but still crisp in the middle. Drain and set aside.
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly spray a deep 9 x 9 inch baking dish with cooking oil to prevent sticking.
- Combine Ingredients: In a large bowl, combine the cooked quinoa, cooked chicken, steamed broccoli, egg, chicken stock, half of the shredded cheese, dried basil, dried oregano, salt, and pepper. Mix thoroughly until evenly distributed.
- Assemble Casserole: Press the mixture firmly into the prepared baking dish to create an even layer. Sprinkle the remaining shredded cheese evenly over the top.
