Instructions

  1. Cook Quinoa: Prepare quinoa according to package directions using your preferred method on the stovetop, in a rice cooker, or Instant Pot until fluffy and fully cooked. Set aside to cool slightly.
  2. Steam Broccoli: Pour ½ inch of water into a pot or pan and bring it to a simmer. Add broccoli florets, cover, and steam for 3-5 minutes until the broccoli is bright green and tender but still crisp in the middle. Drain and set aside.
  3. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly spray a deep 9 x 9 inch baking dish with cooking oil to prevent sticking.
  4. Combine Ingredients: In a large bowl, combine the cooked quinoa, cooked chicken, steamed broccoli, egg, chicken stock, half of the shredded cheese, dried basil, dried oregano, salt, and pepper. Mix thoroughly until evenly distributed.
  5. Assemble Casserole: Press the mixture firmly into the prepared baking dish to create an even layer. Sprinkle the remaining shredded cheese evenly over the top.
  6. Bake Covered: Cover the baking dish with foil or a lid and bake for 40 minutes to allow flavors to meld and the casserole to set.
  7. Bake Uncovered: Remove the cover and bake for an additional 5-10 minutes until the cheese topping is melted, bubbly, and slightly golden.
