Description

Deliciously sweet and savory brown sugar roasted sweet potatoes, perfect as a comforting side dish. Tender sweet potato chunks are coated with a buttery maple and brown sugar glaze, then roasted to caramelized perfection with hints of smoked paprika and garlic powder.

Ingredients

Scale

Sweet Potatoes

  • 2 pounds sweet potatoes, washed, peeled and cut into 2 inch chunks

Glaze

  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons pure maple syrup (or honey)
  • 3 tablespoons light brown sugar, tightly packed
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper (as needed)

Garnish

  • Chopped parsley for serving

Instructions

  1. Preheat: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the sweet potatoes.
  2. Prep a pan: Line a baking sheet with parchment paper to prevent sticking and for easy cleanup, then set it aside.
  3. Make the glaze: In a medium bowl, combine olive oil, melted unsalted butter, pure maple syrup (or honey), light brown sugar, smoked paprika, garlic powder, kosher salt, and freshly cracked black pepper. Whisk until all ingredients are fully blended.
  4. Combine: Place the peeled and chopped sweet potato chunks into a large bowl. Pour the prepared glaze over the sweet potatoes and toss thoroughly to ensure every piece is evenly coated.
  5. Transfer to the baking sheet: Spread the glazed sweet potatoes out in a single layer on the prepared baking sheet to allow even roasting.
  6. Roast: Roast the sweet potatoes in the preheated oven at 400°F for 20 minutes. After 20 minutes, use a spatula to flip the potatoes for even cooking. Continue roasting for an additional 10 to 20 minutes, or until the sweet potatoes are tender when pierced with a fork and caramelized on the edges.
  7. Serve: Remove from the oven and transfer the roasted sweet potatoes to a serving dish. Garnish with freshly chopped parsley and serve warm as a flavorful side dish.

Notes

  • For added depth, you can substitute smoked paprika with regular paprika or add a pinch of cayenne for heat.
  • Maple syrup adds a richer flavor, but honey is a suitable alternative.
  • Make sure the sweet potato chunks are cut evenly to ensure uniform roasting.
  • Use parchment paper for easy cleanup and to prevent sticking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven for best texture.
