  • Author: anna
  • Total Time: 1 hour 55 minutes
  • Yield: 8 servings 1x

Description

A Brownie Ice Cream Cake combines rich, fudgy chocolate brownies with creamy ice cream layers for a decadent and celebratory dessert. Perfect for birthdays or special occasions, this no-bake freezer cake layers baked brownie rounds with your favorite ice cream flavors and a topping of hot fudge sauce.

Ingredients

Scale

Brownie Layer

  • 1 18.3 oz brownie mix (prepared according to package directions)

Ice Cream Layer

  • 2 pints ice cream (flavors of your choice)

Topping

  • 1 cup hot fudge sauce
  • Pieces of remaining brownies for garnish

Instructions

  1. Prepare Brownies: Bake the brownie mix in a 9 x 13 inch pan following the directions on the box. Once baked, let the brownies cool completely.
  2. Cut Brownie Circles: Using a 6-inch round cutter or a similar tool, cut out two 6-inch circles from the cooled brownies.
  3. Assemble First Layer: Place one brownie circle in the bottom of a 6-inch springform pan. Spread one pint of your chosen ice cream evenly on top of this brownie base.
  4. Add Second Layer: Place the second brownie circle on top of the ice cream layer. Then spread the remaining pint of ice cream over the top.
  5. Freeze to Harden: Cover the assembled cake tightly with plastic wrap and freeze for at least 1 hour to allow it to harden and set properly.
  6. Prepare to Serve: Remove the cake from the freezer about 5 minutes before serving to allow it to soften slightly for easier slicing.
  7. Finish with Toppings: Drizzle the top with hot fudge sauce and garnish with pieces of the leftover brownies for extra texture and flavor.

Notes

  • If a springform pan is unavailable, use a regular 6-inch round cake pan lined with parchment or wax paper to aid in removal.
  • To make a larger cake, use an 8-inch springform pan, two brownie mixes, 2 quarts of ice cream, and extra hot fudge sauce.
