  • 2 tbsp Olive oil (divided)

For the Stir Fry:

  • 6 cloves Garlic (minced)
  • 2 tbsp Fresh ginger (minced; or 1/2 tsp ground ginger – see instructions)
  • 1/2 large Onion (diced)
  • 1 large Bell pepper (diced)
  • 1 medium head Cabbage (chopped or coarsely shredded; ~810 cups)
  • 2 medium Carrots (shredded)
  • 1/4 cup Coconut aminos (or low-sodium soy sauce)
  • 2 tbsp Honey
  • 2 tsp Toasted sesame oil
  • 1/4 cup Green onions (sliced)
  • 1 tbsp Sesame seeds (optional)

Instructions

  1. Pat the chicken pieces dry: Season with salt and pepper.
  2. Sear the chicken: Cook until golden brown and cooked through.
  3. Saute garlic and ginger: Add to the pan and cook until fragrant.
  4. Cook onions and bell peppers: Until translucent and soft.
  5. Prepare sauce: Whisk together coconut aminos and honey.
  6. Add vegetables and sauce: Stir fry until tender.
  7. Combine with chicken: Cook until warmed through.
  8. Finish and garnish: Stir in sesame oil, green onions, and sesame seeds.
