- 1 lb Boneless skinless chicken breast (cut into 1-inch pieces)
- 1 tsp Sea salt (divided)
- 1/2 tsp Black pepper (divided)
- 2 tbsp Olive oil (divided)
For the Stir Fry:
- 6 cloves Garlic (minced)
- 2 tbsp Fresh ginger (minced; or 1/2 tsp ground ginger – see instructions)
- 1/2 large Onion (diced)
- 1 large Bell pepper (diced)
- 1 medium head Cabbage (chopped or coarsely shredded; ~8–10 cups)
- 2 medium Carrots (shredded)
- 1/4 cup Coconut aminos (or low-sodium soy sauce)
- 2 tbsp Honey
- 2 tsp Toasted sesame oil
- 1/4 cup Green onions (sliced)
- 1 tbsp Sesame seeds (optional)
Instructions
- Pat the chicken pieces dry: Season with salt and pepper.
- Sear the chicken: Cook until golden brown and cooked through.
- Saute garlic and ginger: Add to the pan and cook until fragrant.
- Cook onions and bell peppers: Until translucent and soft.
- Prepare sauce: Whisk together coconut aminos and honey.
- Add vegetables and sauce: Stir fry until tender.
- Combine with chicken: Cook until warmed through.
- Finish and garnish: Stir in sesame oil, green onions, and sesame seeds.

- You can customize this stir fry with your favorite vegetables like broccoli, snap peas, or mushrooms.
- For a spicier kick, add red pepper flakes or sriracha sauce.
