Description

Carrot Apple Salad is a light, crunchy, and refreshing salad that combines the natural sweetness of apples with the earthy crunch of fresh carrots, bound by a creamy yogurt dressing with honey and lemon. This easy-to-make dish is perfect as a side, for meal prep, or a healthy snack, providing a nutritious mix of fiber, antioxidants, and probiotics.

Ingredients

Scale

Salad Ingredients

  • 6 medium carrots, peeled and shredded
  • 1 large apple (Honeycrisp or Granny Smith), grated or julienned
  • ½ cup diced celery (optional)
  • 1 tbsp chopped parsley (optional)

Dressing Ingredients

  • ¾ cup plain yogurt (Greek yogurt can be used for more protein)
  • 1 tsp honey or maple syrup
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Prep the produce: Peel and shred the carrots and apple using a box grater or food processor. Dice the celery if using. Immediately toss the apple with lemon juice to prevent browning.
  2. Mix the dressing: In a small bowl, whisk together the plain yogurt, honey, lemon juice, parsley, salt, and pepper until smooth and well combined.
  3. Combine: In a large mixing bowl, toss the shredded carrots, shredded apple, and diced celery. Pour the dressing over the salad and mix well until all ingredients are evenly coated.
  4. Chill: Cover the salad and refrigerate for at least 1 hour. Chilling allows flavors to meld and the salad to firm up for the best texture.
  5. Serve: Garnish optionally with extra parsley or a sprinkle of nuts/seeds before serving. Enjoy as a side dish, light meal, or snack.

Notes

  • For a vegan version, substitute plain yogurt with plant-based yogurt (almond, coconut, or oat) and use maple syrup instead of honey.
  • To avoid a watery salad, pat shredded apples dry before mixing.
  • Make dressing separately and add just before serving if making salad ahead to preserve crunchiness.
  • Add-ins like raisins, walnuts, sunflower seeds, or cinnamon can enhance flavor and nutrition.
  • Store in an airtight container in the refrigerator for 2–3 days; not suitable for freezing.
