Instructions
- Sauté Aromatics: In a non-stick pot over medium heat, melt the coconut oil. Add the cauliflower florets and minced garlic, stirring frequently. Cook for about 2 minutes until fragrant to develop flavor.
- Simmer Cauliflower: Add the vegetable stock, Italian seasoning, salt, and pepper to the pot. Cover, bring to a light boil, then reduce the heat to low-medium. Let it simmer until the cauliflower is fork tender, about 6 to 7 minutes.
- Steam Off Excess Moisture: Remove the pot from heat and take off the lid. Allow it to steam out for 10 minutes, concentrating flavors and reducing excess liquid.
- Blend Sauce: Transfer all cooked ingredients into a heat-safe blender jug such as a Vitamix. Add the nutritional yeast or Parmesan cheese. Blend on speed 6-7 until the sauce is smooth. If the mixture is too thick or doesn’t blend well, gradually add the unsweetened almond milk by 1/4 cup increments until your desired texture is achieved.
- Serve: Use the sauce immediately over cooked pasta or steamed vegetables for a creamy, flavorful meal.
- Storage: Store any leftover sauce in a sealed container in the refrigerator for up to 3 days or freeze for up to 3 months. Thaw in the refrigerator before use.
