Ingredients
Scale
Cheddar Cups
- 2 cups shredded sharp cheddar cheese
Avocado Feta Mousse
- 1 ripe avocado
- 1 cup crumbled feta cheese
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh chives, chopped
- Salt and pepper, to taste
Instructions
- Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to prepare for baking the cheddar cups.
- Make Cheddar Cups: Line a baking sheet with parchment paper. Place small mounds of shredded cheddar cheese evenly spaced apart on the sheet, then flatten each mound slightly to help form the base of the cups.
- Bake: Bake the cheese mounds in the oven for 8-10 minutes or until melted and bubbling. Remove from the oven and let cool just enough to handle safely.
- Form Cups: While still warm, press down on each melted cheese mound using the back of a shot glass or a similar item to shape them into cups. Allow the cups to cool completely on the parchment paper, so they harden into a crisp cup shape.
- Prepare Mousse: In a blender or food processor, combine the ripe avocado, crumbled feta cheese, fresh lemon juice, olive oil, chopped dill, chopped chives, salt, and pepper. Blend the mixture until it becomes smooth and creamy.
- Fill Cups: Once the cheddar cups are fully cooled and hardened, fill each generously with the prepared avocado feta mousse, ensuring a good balance of creamy filling and crispy cup.
- Serve & Enjoy: Arrange the filled cheddar cups on a serving platter. Optionally garnish with extra fresh herbs for presentation and serve immediately to enjoy the best texture and flavor.
Notes
- Use sharp cheddar for best melting and flavor results.
- Work quickly when forming cups as the cheese hardens fast.
- Serve immediately after filling to maintain crispness of cups.
- Leftover mousse can be stored in an airtight container in the refrigerator for up to 2 days.
- Optional garnish options include extra dill, chives, or a sprinkle of paprika.
