Chicken:
- 1 pound chicken breasts (cut into 1×1-inch cubes)
Onion and Garlic:
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
Rice Mixture:
- 1 1/2 cups white long grain rice (rinsed)
- 2 cups chicken stock
- 2 cups water
Broccoli:
- 3 cups broccoli florets (roughly chopped)
- 1/2 cup milk
- 2 cups sharp cheddar cheese (shredded, divided)
Instructions
- Cut and Season Chicken: Cut the chicken breasts into 1×1-inch cubes, season with salt and pepper.
- Brown Chicken: Preheat a pan, add olive oil, brown the chicken cubes for 5-7 minutes.
- Sauté Onion and Garlic: Cook onion until soft, add garlic.
- Cook Chicken and Rice: Return chicken to the pot, add rice, stock, and water. Cook until rice is almost done, then add broccoli.
- Finish and Bake: Stir in milk and 1 cup of cheese. Top with remaining cheese, bake at 425°F until bubbly.
