Ingredients
Scale
Orange Cookies:
- 1/2 cup unsalted butter, room temperature
- 1 cup sugar
- 2 large eggs
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- 2 1/2 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup orange juice
Orange Icing:
- 3 cups powdered sugar
- 2 tablespoons whole milk
- 1/4 cup orange juice
- 1 teaspoon orange zest
Instructions
- Cream butter and sugar: In your stand mixer, add the butter and sugar. Start mixing on medium speed, then increase to high speed and cream together for 2-3 minutes until the mixture is light and fluffy.
- Add eggs and flavorings: Add the eggs one at a time, mixing well after each addition. Then add the orange zest and vanilla extract and mix until fully combined.
- Sift dry ingredients: Sift together the flour, baking powder, and salt to ensure even distribution and to avoid lumps.
- Combine wet and dry: On the lowest mixer speed, add half of the flour mixture followed by half of the orange juice. Then add the remaining flour mixture and the rest of the orange juice, mixing just until combined.
- Chill the dough: Cover the cookie dough and refrigerate for at least 30 minutes, preferably 2 hours, to firm up the dough and prevent cookies from spreading too much when baked.
- Prepare for baking: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper for easy cleanup and to prevent sticking.
- Scoop the dough: Using a 2-tablespoon cookie scoop, place dough balls on the baking sheets about 2 inches apart to allow for spreading.
- Bake the cookies: Bake in the preheated oven for 11-13 minutes until the edges just start to brown, ensuring a chewy texture.
- Make the icing: While the cookies cool, whisk together the powdered sugar, milk, orange juice, and orange zest until smooth and glossy.
- Glaze the cookies: Dip the tops of the cooled cookies into the orange icing and place back onto the baking sheets to allow the glaze to harden before serving.
Notes
- Make sure to chill the cookie dough well before baking to prevent excessive spreading.
- Use fresh orange zest and juice for the best citrus flavor.
- Store cookies in an airtight container to maintain freshness.
- You can adjust the thickness of the icing by adding more powdered sugar or milk as needed.
