Ingredients
Scale
For the Chicken Mayo Filling
- 4 tbsp Mayonnaise
- 1 tbsp Yogurt
- 1 tsp Dijon mustard
- 1 tbsp Lemon Juice
- ½ tsp Salt
- ½ tsp Black pepper
- 1 tsp Garlic (minced)
- 2 cups shredded Chicken (boiled)
- ½ cup Cucumber (finely chopped)
- ¼ cup Onion (finely chopped)
- 2 tbsp Chopped coriander
For the Sandwich
- 2 slices of Bread (for each sandwich)
- 1 tsp Butter (for each side of bread)
Instructions
- Make Chicken Sandwich Filling: In a medium-sized mixing bowl, combine mayonnaise, yogurt, Dijon mustard, and lemon juice. Add salt, black pepper, and minced garlic, then whisk everything together until forming a smooth sauce.
- Mix Filling Ingredients: Transfer the shredded boiled chicken into a large mixing bowl. Pour the prepared sauce over the chicken and add finely chopped cucumber and onion. Mix thoroughly, then sprinkle the chopped coriander on top and give the mixture a final gentle stir.
- Prepare Sandwich – No-Cook Method: Take two slices of bread and spread butter evenly on both sides. Layer the chicken mayo filling evenly onto one slice. Place the second slice of bread on top to form a sandwich. Cut diagonally and serve immediately.
- Prepare Sandwich – Toasted Method: Take two slices of bread and butter both sides. Spread the chicken mayo filling on one slice. Cover with the other slice of bread, and spread additional butter on the outer sides. Toast the sandwich in a pan over medium heat until both sides are crisp and golden brown.
- Serve: Remove from the pan, cut the toasted sandwich diagonally, and enjoy your warm and crunchy chicken mayo sandwich.
Notes
- The shredded chicken should be boiled until tender and then cooled before shredding.
- You can adjust the amount of mayonnaise and yogurt to your preferred creaminess.
- For extra flavor, add a sprinkle of paprika or chili flakes into the filling.
- Use fresh, good quality bread for better texture and taste.
- Toast the sandwich on low to medium heat to avoid burning and allow even crisping.
