  • 4 cooked chicken breasts (about 600g, shredded)
  • 325g sweetcorn (1 tin, drained)
  • 1/2 red onion (finely chopped)
  • 100g cream cheese
  • 2 tbsp barbecue sauce
  • 125g grated mozzarella or cheddar cheese
  • 4 large wraps
  • 1 tbsp sunflower oil (optional for frying)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the chicken: Shred the cooked chicken breasts using two forks or a mixer until you have fine, manageable pieces as shown in the recipe video; this makes the filling easy to mix and wrap.
  2. Mix filling: In a large bowl, combine the shredded chicken, drained sweetcorn, finely chopped red onion, cream cheese, barbecue sauce, grated cheese, and salt and pepper. Stir thoroughly until all ingredients are evenly incorporated.
  3. Assemble wraps: Divide the chicken mixture evenly among the four large wraps, placing the filling in the center of each wrap.
  4. Roll wraps: Fold the sides of each wrap inward, then roll tightly from one end to the other to enclose the filling securely.
  5. Optional frying: If you prefer a crispy wrap, heat the sunflower oil in a sauté pan over medium-low heat. Place each wrap seam-side down and cook for 4-5 minutes until golden, then flip and cook the other side for another 4-5 minutes. Keep the heat low to allow the cheese inside to melt thoroughly without burning the outside.
  6. Serve: Serve the wraps immediately while warm and crispy, or wrap them up for lunches or picnics. They taste great both hot and cold.

  • If using raw chicken breasts, be sure to cook them thoroughly before shredding.
