Description
This Cinnamon Roll Banana Bread combines the best of two worlds – fluffy banana bread with a sweet cinnamon swirl, all topped with a decadent cream cheese frosting. It’s a delightful treat for breakfast or as a dessert.
Ingredients
Banana Bread
- 3 large ripe bananas, mashed
- 1/4 cup salted butter, at room temperature
- 1 cup white sugar
- 1 large egg
- 1 & 1/2 cups all-purpose flour, spooned and leveled
- 1 tsp baking soda
- 1/4 tsp salt
Cinnamon Swirl
- 1/4 cup salted butter, melted and cooled to room temperature
- 2 tsp cinnamon
- 1/3 cup brown sugar
Cream Cheese Frosting
- 2 oz full-fat cream cheese, at room temperature
- 2 tbsp salted butter, at room temperature
- 3/4 cup powdered sugar
- 1/4 tsp vanilla extract
Instructions
- Preheat oven to 350 F. Grease loaf pan and line bottom and long edges with parchment paper.
- Banana Bread
In a large bowl, cream butter and sugar together. Add the egg and mix until smooth. Mix in the mashed bananas. In a separate bowl, whisk together flour, baking soda, and salt. Fold in the dry ingredients into the wet. Set aside.
- Cinnamon Swirl
In a bowl, combine the melted butter, cinnamon, and brown sugar. Mix till combined.
- Assembling the Loaf
Pour half of the batter into your loaf pan and spread it evenly. Add half of your cinnamon mixture on top, spreading evenly. Add the remaining banana bread batter into the loaf pan and top with the remaining cinnamon swirl mixture. Take a butter knife and gently trace lines horizontally and then vertically to add the swirls. Bake for 55 minutes or until a toothpick inserted into the center of the loaf comes out clean. Let fully cool in the pan before removing and frosting.
- Cream Cheese Frosting
In a medium bowl, add the cream cheese, butter, powdered sugar, and vanilla. Mix together until smooth. Top the frosting on the cooled banana bread and slice!
Notes
- *Spoon and level flour refers to the way of measuring flour. To properly measure flour, you should scoop spoonfuls of flour into your measuring cup and then scrape with a knife to level off the excess. Scooping the measuring cup directly into your flour causes the flour to compress and get more than the recipe calls for.
