  • Total Time: 50 minutes
  • Yield: 8 slices 1x
  • Diet: Gluten Free

Description

The Cloud Bread Pastel Swirl Loaf is an airy, flour-free bread alternative featuring a light texture and beautiful pastel swirls. Made from whipped egg whites and cream cheese, this gluten-free, low-carb loaf is perfect for sweet or savory toppings and special occasions, delivering a visually stunning and delightfully soft bread experience.

Ingredients

Scale

Cloud Bread Base

  • 6 large eggs, separated
  • 3 oz (85 g) cream cheese, softened
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • Optional: 1–2 teaspoons sugar or honey (for a lightly sweet version)

Pastel Swirl Colors

  • Gel food coloring in pastel shades (pink, blue, yellow, lavender, or any preferred colors)

Instructions

  1. Preheat the Oven: Preheat your oven to 300°F (150°C). Line a loaf pan with parchment paper, leaving some overhang on the sides to facilitate easy loaf removal later.
  2. Separate the Eggs: Carefully separate the egg whites and yolks into two clean bowls, ensuring no yolk contaminates the whites to allow proper whipping.
  3. Whip the Egg Whites: Add cream of tartar to the egg whites. Using a hand or stand mixer, beat on high speed until stiff peaks form; the whites should hold firm shapes when the whisk is lifted.
  4. Prepare the Yolk Mixture: In the bowl with egg yolks, add softened cream cheese and salt. Beat until the mixture is smooth and lump-free. If desired, incorporate sugar or honey here for a lightly sweet loaf.
  5. Combine Gently: Fold the whipped egg whites into the yolk mixture in batches using a silicone spatula. Fold carefully and slowly to retain airiness critical for a fluffy loaf.
  6. Create the Pastel Swirl: Divide the batter into multiple small bowls according to the number of colors desired. Add a small amount of gel food coloring to each bowl and mix gently to achieve soft pastel hues. Spoon alternating colors into the prepared loaf pan, layering randomly. Use a toothpick or skewer to swirl the colors once or twice, avoiding over-mixing to maintain distinct designs.
  7. Bake the Loaf: Bake in the preheated oven for 30 to 40 minutes until the top is lightly golden and the loaf feels firm yet springy to the touch.
  8. Cool Before Slicing: Let the loaf cool in the pan for 5 to 10 minutes, then lift it out using the parchment paper. Cool completely on a wire rack before slicing to ensure it holds its shape.

Notes

  • Use gel food coloring rather than liquid to prevent batter deflation.
  • Whip egg whites to true stiff peaks for best volume.
  • Fold batter gently to preserve airiness.
  • Allow the loaf to cool fully before slicing to maintain structure.
