 - 1 tablespoon lime juice

Cod:
- 4 cod fillets (about 6 oz each)
 - Salt and pepper to taste
 - Fresh cilantro or parsley, chopped, for garnish (optional)
 - Lime wedges, for serving (optional)
 
Instructions
- Prepare the Sauce: Make the curry sauce by heating olive oil, sautéing garlic, adding spices, coconut milk, lime juice, salt, pepper, and honey. Simmer until slightly thickened.
 - Prepare the Cod Fillets: Season cod with salt and pepper.
 - Arrange the Cod: Place cod fillets in a baking dish.
 - Pour the Sauce: Pour the prepared coconut curry sauce over the cod fillets.
 - Bake the Cod: Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until cooked through.
