Instructions

  1. Prepare the cracker truffle center: Unwrap the peanut butter and honey snack crackers and place them into a food processor. Pulse until the crackers are crushed completely into fine crumbs.
  2. Mix ingredients: Add the softened cream cheese, honey, and peanut butter to the crushed cracker crumbs. Pulse the mixture until everything is combined into a thick, cohesive batter.
  3. Form the truffles: Scoop the batter into small balls about 3/4 inch in diameter using your hands or a spoon. Place these truffle balls on a parchment-lined cookie sheet.
  4. Chill truffles: Refrigerate the truffle balls for at least 15 minutes to firm up before coating.
  5. Melt chocolate coating: While the truffles chill, melt the dark chocolate and coconut oil together using a double boiler method until smooth and completely melted.
  6. Coat the truffles: Remove the chilled truffle balls from the fridge and dip each one individually into the melted chocolate, ensuring they are fully coated. Place the coated truffles back onto the parchment-lined cookie sheet.
