Pasta:

  • 6 oz. dry Farfalle (Bowtie) Pasta

Chicken:

  • 8 oz. Chicken Breast
  • 2 tsp. Cajun Seasoning
  • 2 tsp. Avocado oil

Vegetables:

  • 1/2 cup diced Orange Bell Pepper
  • 2/3 cup thinly sliced Zucchini
  • 2 tbsp. minced Jalapeno
  • 1/3 cup diced Tomato
  • 1/3 cup chopped Green Onion (divided)
  • 2 tsp. Tomato Paste
  • 1 clove Garlic (minced)
  • 1/2 tsp. Crushed Red Pepper (plus more for serving)

Sauce:

  • 1 cup Half and Half (or heavy cream)
  • 1/4 cup grated Parmesan Cheese
  • Salt & freshly cracked Black Pepper

Instructions

  1. Season Chicken: Season chicken with Cajun seasoning, ½ tsp. per side. Set aside to rest while preparing vegetables.
  2. Cook Chicken: Cook chicken in avocado oil until browned and cooked through. Set aside.
  3. Saute Vegetables: Cook zucchini, bell pepper, jalapeno, tomato, green onion, and tomato paste until tender.
  4. Prepare Pasta: Boil farfalle pasta until al dente.
  5. Make Sauce: Add garlic, crushed red pepper, and half and half to the pan. Simmer until thickened.
  6. Combine: Add pasta to the sauce, mix in Parmesan cheese, and adjust consistency with pasta water.
  7. Serve: Divide into bowls and garnish with more crushed red pepper, green onions, and Parmesan cheese.

Notes

  • You can adjust the spice level by increasing or decreasing the amount of crushed red pepper.
  • For a lighter version, you can use low-fat milk instead of half and half.
