Lasaña Noodles:

- 3 cups shredded mozzarella cheese, divided
- ¾ cup freshly grated Parmesan cheese, divided
- 2 tablespoons chopped fresh parsley leaves
Mushroom Cream Sauce:
- ¼ cup unsalted butter
- 2 cloves garlic, minced
- 1 pound cremini mushrooms, thinly sliced
- 1 onion, diced
- ¼ cup all-purpose flour
- 3 cups milk, at room temperature
- 1 teaspoon dried basil
- ½ teaspoon dried oregano
- Pinch of nutmeg
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Preheat Oven and Prepare Dish: Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook Noodles: Cook lasagna noodles according to package instructions, then drain and set aside.
- Sauté Garlic and Onion: In a skillet over medium heat, melt butter. Sauté garlic and onion until soft.
- Cook Mushrooms: Add mushrooms and cook until tender, then remove excess liquid.
- Add Flour: Stir in flour and cook to form a roux.
- Make Sauce: Gradually whisk in milk, herbs, salt, and pepper. Cook until thickened.
- Prepare Ricotta Mixture: Combine ricotta, spinach, cheeses, and parsley in a bowl.
- Layer Ingredients: Spread sauce in dish, layer noodles, ricotta mixture, and sauce. Repeat layers, ending with sauce.
- Add Cheese: Sprinkle remaining mozzarella and Parmesan over the top.
