Batter Ingredients

Frying Ingredients
- 1 pint vegetable oil
- 2 cups jalapeno peppers, sliced (5–6 large jalapeños)

Instructions
- Prepare jalapeños. Wash the jalapeños thoroughly and remove the stems.
- Slice jalapeños into spears. Cut each jalapeño in half lengthwise, remove the seeds if preferred for less heat, and then slice into thin spears or skinny sticks until all jalapeños are cut.
- Mix batter ingredients. In a mixing bowl, combine the all-purpose flour, kosher salt, black pepper, chili powder, and garlic powder. Add the eggs and beer, mixing until smooth. The batter should be slightly thinner than pancake batter; add more flour if you prefer thicker batter.
- Heat oil for frying. Pour vegetable oil into a deep fryer or a large, deep skillet and heat to 365°F (185°C). Maintain this temperature throughout frying for best results.
- Dip jalapeños in batter. Carefully dip each jalapeño spear into the batter, making sure all sides are evenly coated.
- Deep fry the battered jalapeños. Place the coated jalapeños into the hot oil carefully. Fry until they turn golden brown and crispy and float to the surface, usually about 2-4 minutes.
- Drain excess oil and season. Remove the fried jalapeño spears with a slotted spoon and place on paper towels to drain excess oil. While still hot, sprinkle with kosher salt if desired.
- Serve immediately. Enjoy your crispy fried jalapeños as a snack or appetizer while warm for the best crunch and flavor.
