Description

This Crockpot Tex Mex Tater Tot Casserole is a delicious and easy-to-make dish that combines flavorful ground beef, breakfast sausage, corn, tater tots, and gooey cheese, all cooked to perfection in a slow cooker. It’s a comforting and hearty meal that the whole family will love.

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 pound breakfast sausage (Jimmy Dean)
  • 1/4 cup chopped onion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon onion powder

Additional Ingredients:

  • 1 can (10 oz) Rotel diced tomatoes & green chilies, drained
  • 1 can (15.25 oz) whole kernel corn including the liquid
  • 1 bag (32 oz) frozen tater tots
  • 3 cups shredded Colby cheese

Instructions

  1. Saute Onion: In a skillet over medium heat, saute the chopped onion for 2 minutes.
  2. Cook Meat: Add ground beef, breakfast sausage, salt, pepper, and onion powder to the skillet. Cook until the meat is no longer pink (4-6 minutes).
  3. Add Tomatoes and Corn: Stir in the drained Rotel tomatoes and corn. Cook for an additional 2 minutes.
  4. Layer in Slow Cooker: Spray the slow cooker liner with nonstick spray. Place half of the frozen tater tots at the bottom, followed by half of the meat mixture. Repeat with the remaining tater tots and meat mixture.
  5. Cook: Cook on High for 2 1/2 hours.
  6. Add Cheese: Cover the casserole with shredded Colby cheese and cook for an additional 30 minutes until the cheese is melted.
  7. Serve: Top with salt, pepper, salsa, and a dollop of sour cream before serving.

Notes

  • Ingredients Substitutions: – Breakfast sausage can be substituted with ground Italian sausage. – Rotel tomatoes with green chilies can be replaced by Rotel tomatoes with Jalapeno or a can of diced tomatoes and the juice of a jalapeno. – Cheese can be substituted with any type you prefer. – For extra flavor, add a packet of taco seasoning to the ground beef.
