  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Blend Dates and Nuts: Add the pitted and roughly chopped Medjool dates along with the roasted nuts to a food processor. Pulse and blend until they are roughly chopped and mixed together.
  2. Add Flavorings and Blend: To the date and nut mixture, add the desiccated coconut, cocoa powder, vanilla extract, and a pinch of salt. Blend again until a coarse, sticky paste forms but still retains some texture.
  3. Shape the Roll: Remove the mixture from the food processor and transfer it onto a sheet of parchment paper or plastic wrap. Use the paper or wrap to roll the mixture into a log shape, pressing firmly to compact it evenly.
  4. Coat with Coconut: Spread extra shredded coconut on a shallow plate. Roll the formed date log over the coconut to coat it evenly on all sides. This adds flavor and prevents sticking.
  5. Refrigerate to Firm Up: Place the coconut-coated date roll in the refrigerator for at least 1 to 2 hours. Chilling helps the roll firm up, making it easier to slice.
  6. Slice and Store: After chilling, slice the roll into ½-inch disks. Store the date roll slices in an airtight container or sealed plastic bag in the fridge. For longer storage and convenient snacking, keep slices in a ziplock bag in the freezer.
