  • 1/8 tsp baking powder

Instructions

  1. Make brown butter: In a medium light-colored frying pan or skillet, melt the butter over low-medium heat. Stir constantly as the butter foams to avoid burning the milk solids. When the milk solids turn dark golden brown and emit a nutty aroma, immediately remove from heat.
  2. Strain and cool butter: Strain the browned butter into a heatproof bowl to stop cooking and let it cool completely before use.
  3. Mix wet ingredients: In a large bowl, whisk the egg whites, castor sugar, and honey for 3 minutes or until the sugar dissolves fully.
  4. Combine dry ingredients: Sift together cake flour, almond flour, cocoa powder, and baking powder into the wet mixture. Whisk until evenly combined.
  5. Add browned butter: Pour the cooled browned butter into the batter and whisk thoroughly to incorporate.
  6. Chill batter: Cover the bowl with plastic wrap and refrigerate for at least 1 hour or overnight to develop flavor. This step is recommended but optional.
  7. Preheat oven and prepare molds: Set the oven to 375℉/190℃. Butter the financier molds to prevent sticking.
  8. Prepare batter: Remove batter from the fridge and gently mix with a spatula to loosen it.
  9. Fill molds: Transfer the batter to a piping bag and pipe into the molds until they are about 80-90% full. Alternatively, use a spoon.
  10. Add chocolate topping: Sprinkle chopped chocolate or chocolate chips evenly over the batter in each mold.
  11. Bake: Place molds in the oven and bake for 12-15 minutes, or until the financiers are golden brown on top.
  12. Cool: Immediately remove the financiers from the molds and transfer to a cooling rack to cool completely. Best enjoyed the same day.
