Sauce

  • 1 cup mayonnaise
  • 1 tablespoon sugar
  • 1 tablespoon sriracha

Instructions

  1. Heat Oil: Heat a pot of canola oil to 375°F (190°C), filling it with at least 3 inches of oil to ensure even frying.
  2. Prepare Dry Mix: In a large bowl, mix together the flour, cornstarch, baking powder, kosher salt, and white pepper. Dredge the shrimp in this mixture, then lightly shake off excess coating.
  3. Make Batter and Fry: Whisk the cold club soda into the dry flour mixture until combined to create a batter. Dip each dredged shrimp into the batter, then immediately fry them in the hot oil until golden brown and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.
  4. Make Sauce and Toss: Whisk together mayonnaise, sugar, and sriracha in a bowl to create the spicy mayo sauce. Toss the freshly fried shrimp gently with the sauce until evenly coated.
  5. Serve: Serve the Dynamite Shrimp immediately as an appetizer or main course, optionally with sides like egg rolls, potstickers, or sweet chili sauce.
