Sauce
- 1 cup mayonnaise
- 1 tablespoon sugar
- 1 tablespoon sriracha
Instructions
- Heat Oil: Heat a pot of canola oil to 375°F (190°C), filling it with at least 3 inches of oil to ensure even frying.
- Prepare Dry Mix: In a large bowl, mix together the flour, cornstarch, baking powder, kosher salt, and white pepper. Dredge the shrimp in this mixture, then lightly shake off excess coating.
- Make Batter and Fry: Whisk the cold club soda into the dry flour mixture until combined to create a batter. Dip each dredged shrimp into the batter, then immediately fry them in the hot oil until golden brown and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.
- Make Sauce and Toss: Whisk together mayonnaise, sugar, and sriracha in a bowl to create the spicy mayo sauce. Toss the freshly fried shrimp gently with the sauce until evenly coated.
- Serve: Serve the Dynamite Shrimp immediately as an appetizer or main course, optionally with sides like egg rolls, potstickers, or sweet chili sauce.
