It’s a hearty, satisfying meal perfect for weeknights or any day when you want a warm, home-cooked dinner without complicated preparation. Served best over mashed potatoes, rice, or buttered noodles, these tender hamburger steaks soak up the rich gravy, making every bite flavorful and comforting.

Ingredients

Scale

For the Hamburger Steaks

  • 1 1/2 pounds ground beef
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 2 tablespoons milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, optional
  • 2 tablespoons olive oil, for cooking

For the Onion Mushroom Gravy

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, thinly sliced
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Make the beef mixture: In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, onion powder, salt, black pepper, and chopped parsley if using. Mix just until ingredients are combined to avoid dense patties.
  2. Shape the patties: Divide the mixture into 4 to 6 oval-shaped patties. Press firmly enough to hold together but do not over-compact. Make a slight indentation in the center of each patty to ensure even cooking.
  3. Brown the hamburger steaks: Heat olive oil in a large skillet over medium to medium-high heat. Add the patties and cook for 4 to 5 minutes per side until nicely browned. They do not need to be fully cooked at this point. Remove patties to a plate.
  4. Cook the onions and mushrooms: In the same skillet, add butter and olive oil. Add sliced onions and mushrooms, cooking 8 to 10 minutes while stirring occasionally until onions soften and mushrooms brown. Stir in minced garlic and cook for 30 seconds.
  5. Build the gravy: Sprinkle flour over the veggies and stir well, cooking 1 minute to eliminate raw flour taste. Slowly pour in beef broth while stirring constantly to avoid lumps. Add Worcestershire sauce, dried thyme, salt, and pepper. Stir to combine.
  6. Simmer everything together: Return hamburger steaks and any accumulated juices to the skillet. Spoon gravy over patties. Reduce heat and simmer for 10 to 15 minutes until patties are cooked through and gravy thickens.
  7. Finish and serve: Sprinkle with chopped fresh parsley and serve hot over mashed potatoes, rice, or noodles with your choice of vegetables.

Notes

  • Do not overmix the beef mixture to keep patties tender.
  • Make a slight indentation in each patty to prevent puffing during cooking.
  • If gravy thickens too much, add a splash of extra beef broth to loosen it.
  • Use a large enough skillet so patties brown evenly without overcrowding.
  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
  • Reheat gently on the stovetop with extra broth to maintain texture and moisture.
  • Optional: Stir a splash of heavy cream into the gravy for extra richness.
  • Variations include using baby bella mushrooms for deeper flavor or adding paprika to the beef mixture.
