Extra Firm Tofu or Assorted Vegetables or Mushrooms:

280g (approx. 10 oz) sliced

Water or Vegetable Broth:

240ml

Soy Sauce:

5–7 tablespoons

Dark Soy Sauce:

1.5 teaspoons (optional)

Corn Starch:

2–3 tablespoons

Sugar, Maple Syrup, or Liquid Sweetener:

1–3 tablespoons

Rice Vinegar, White Vinegar, or Lemon Juice:

2 tablespoons

Ground Black Pepper:

1/4 teaspoon

Chili Garlic Sauce or Hot Sauce:

1/2 tablespoon (optional)

Sesame Oil:

1 tablespoon

Garlic Cloves, minced:

2 (optional)

Chopped Scallions

Sesame Seeds


Instructions

  1. Prepare Sauce – In a bowl, whisk together water or broth, soy sauces, corn starch, sweetener, vinegar or lemon juice, pepper, chili garlic sauce, sesame oil, and garlic. Adjust flavors and set aside.
  2. Cook Noodles – Boil water, cook noodles until just under al dente, drain, rinse, and set aside.
  3. Sauté Vegetables or Tofu – Sauté tofu, mushrooms, or vegetables until cooked.
  4. Cook Sauce – Simmer sauce mixture in the pan with veggies or tofu until thickened.
  5. Combine Noodles and Sauce – Add noodles to the pan, coat with sauce, and cook to absorb flavors.
  6. Season and Serve – Adjust seasoning if needed, garnish with sesame seeds and scallions, and serve hot.

Notes

  • Feel free to adjust the spice level by adding more or less chili garlic sauce.
