- 1/2 cup Granulated Sugar
- 1/2 cup Mirin (Japanese sweet rice wine)
Instructions
- Combine Ingredients: In a small saucepan, whisk together the soy sauce, granulated sugar, and mirin until fully blended.
- Simmer Sauce: Place the saucepan over medium-high heat and bring the mixture to a boil. Then reduce the heat to a gentle simmer and cook until the volume reduces to about 3/4 cup, taking care not to boil too hard to avoid caramelizing.
- Cool the Sauce: Remove the saucepan from heat and let the sauce cool to room temperature naturally.
- Chill: Transfer the cooled sauce to a clean container and refrigerate until ready to use, which helps thicken and deepen the flavors.
- Serve: Spoon the eel sauce into a pastry bag or sauce bottle, cut the tip if needed, and drizzle over prepared sushi or grilled dishes to enhance flavor.
