Instructions
- Mix Dry Ingredients: In a large bowl, mix the flour, baking powder, and salt together.
- Prepare Wet Ingredients: In another bowl, whisk together the mashed bananas, melted butter, egg, buttermilk, brown sugar, and vanilla until smooth.
- Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients and stir gently with a spatula. Do not overmix; a few lumps are okay.
- Heat Griddle: Heat a griddle or large skillet over medium-low heat and grease with butter.
- Cook Pancakes: Drop the batter onto the griddle in ⅓ cup portions, spreading it slightly. Cook until bubbles form around the edges, then flip and cook until golden brown.
