Garlic Butter for Brushing

Instructions
- Prepare the baking pan: Lightly butter the bottom and sides of a 9×13 inch baking pan and set it aside to prevent the rolls from sticking.
- Melt garlic butter: In a small pot, melt 4 1/2 tablespoons unsalted butter with 2 tablespoons minced garlic. Cook for 1-2 minutes until the garlic is fragrant, then remove from heat and allow to cool while you prepare the dough.
- Mix and knead dough: In a stand mixer bowl, combine 3 1/2 cups + 1 tablespoon all-purpose flour, 3 tablespoons chopped parsley, 1 tablespoon sugar, 2 1/4 teaspoons instant yeast, and 1 teaspoon fine sea salt. Add warm milk (110°F), 1 large room temperature egg, and the cooled garlic butter. Knead with dough hook on low speed for 10-12 minutes until the dough is smooth and soft but tacky. Add flour 1 tablespoon at a time if too sticky.
- Shape rolls and proof: Divide the dough into 12 equal portions (around 67 grams each), then shape each into a smooth ball, pinching the seam at the bottom to seal. Place the rolls evenly spaced in the prepared pan. Cover with plastic wrap or a clean kitchen towel and let rise in a warm spot until doubled in size, about 1-2 hours.
- Preheat oven: Preheat your oven to 350°F (180°C) while the rolls are rising.
- Brush with egg wash and bake: Once risen, brush the tops of the rolls with the beaten egg. Bake for 20-30 minutes or until the tops turn golden brown.
- Prepare garlic butter for finishing: While baking, melt 2 tablespoons unsalted butter with 1 tablespoon minced garlic in a small pot and cook for 1-2 minutes until fragrant. Remove from heat and stir in 1 tablespoon chopped fresh parsley.
- Brush and serve: Remove rolls from the oven and immediately brush the warm rolls generously with the prepared garlic butter. Sprinkle with flaky sea salt if desired and serve warm.
