Chicken and Seasoning

  • 1 1/2 pounds boneless skinless chicken breast, cut into 1” pieces
  • 1/4 cup arrowroot or potato starch
  • 1 tablespoon Trader Joe’s 21 Seasoning Salute or Mrs. Dash seasoning
  • 1 1/2 teaspoons garlic salt
  • 1/2 teaspoon black pepper

Sauté

  • 5 tablespoons vegan butter (divided)
  • 2 tablespoons fresh minced garlic

Instructions

  1. Season the chicken: Add the cubed chicken to a large bowl or reusable zip-top bag. Add all the seasonings and the starch to the bowl or bag. Stir or toss until the chicken pieces are well coated evenly with the mixture.
  2. Heat the pan and add butter: Heat 3 tablespoons of vegan butter in a large sauté pan over medium-high heat until hot and melted.
  3. Cook chicken: Add the seasoned chicken pieces in a single layer to the pan. Cook without moving until the bottom side develops brown crispy bits, about 5 minutes. Flip and cook the other side for approximately 5 minutes until browned and mostly cooked through.
  4. Add remaining butter and garlic: Add the remaining 2 tablespoons of vegan butter and 2 tablespoons of fresh minced garlic to the pan with the chicken. Sauté for an additional 2-3 minutes, stirring occasionally, until the garlic is lightly browned and fragrant and the chicken is fully cooked with no pink inside.
  5. Serve and enjoy: Remove from heat and serve immediately. This dish pairs well with steamed rice or cauliflower rice and green beans that you can quickly steam in the microwave while the chicken cooks.
  6. Storage: Freeze any leftover chicken bites in a sealed container for up to 3 months.
