Sausage
- 250g Italian sausage
- 1 tablespoon olive oil

- 4 cloves garlic, minced
Dairy
- 4 tablespoons butter
- 1 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
Seasoning
- Salt to taste
- Black pepper to taste
Instructions
- Cook Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 8-10 minutes. Drain the pasta and set aside.
- Brown Sausage: Heat olive oil in a large skillet over medium heat. Add the Italian sausage, crumble it as it cooks, and sauté until browned and cooked through, around 6-8 minutes. Remove the sausage from the skillet and set aside.
- Sauté Garlic in Butter: In the same skillet, add the butter and minced garlic. Cook for about 1 minute until the garlic is fragrant and the butter is melted.
- Cook Spinach: Add the fresh spinach to the skillet with the garlic butter and sauté until wilted, about 2-3 minutes.
- Combine Sausage and Spaghetti: Return the cooked sausage to the skillet. Add the drained spaghetti and toss everything together thoroughly to coat the noodles in the garlic butter and combine all ingredients evenly.
- Melt Cheese: Sprinkle shredded mozzarella and grated Parmesan evenly on top of the pasta mixture. Cover the skillet with a lid and let it sit on low heat for 2-3 minutes until the cheese melts.
- Season and Serve: Season with salt and black pepper to taste. Toss gently to combine, then serve the dish hot for a delicious and comforting meal.
Notes
- Use Italian sausage with or without casings based on preference.
- For extra flavor, add a pinch of red pepper flakes when sautéing garlic.
- Fresh spinach can be substituted with baby kale or arugula if desired.
- To make it lower in fat, reduce butter to 2 tablespoons and use part-skim mozzarella.
- Leftovers taste great reheated in a skillet with a splash of olive oil to loosen the sauce.
