Description

A rich and flavorful Garlic Butter Spaghetti with Cheesy Italian Sausage and fresh spinach, combining tender pasta with savory sausage and melted mozzarella and Parmesan cheese for a satisfying and easy weeknight meal.

Ingredients

Scale

Pasta

  • 400g spaghetti

Sausage

  • 250g Italian sausage
  • 1 tablespoon olive oil

Vegetables & Aromatics

  • 3 cups fresh spinach
  • 4 cloves garlic, minced

Dairy

  • 4 tablespoons butter
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese

Seasoning

  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 8-10 minutes. Drain the pasta and set aside.
  2. Brown Sausage: Heat olive oil in a large skillet over medium heat. Add the Italian sausage, crumble it as it cooks, and sauté until browned and cooked through, around 6-8 minutes. Remove the sausage from the skillet and set aside.
  3. Sauté Garlic in Butter: In the same skillet, add the butter and minced garlic. Cook for about 1 minute until the garlic is fragrant and the butter is melted.
  4. Cook Spinach: Add the fresh spinach to the skillet with the garlic butter and sauté until wilted, about 2-3 minutes.
  5. Combine Sausage and Spaghetti: Return the cooked sausage to the skillet. Add the drained spaghetti and toss everything together thoroughly to coat the noodles in the garlic butter and combine all ingredients evenly.
  6. Melt Cheese: Sprinkle shredded mozzarella and grated Parmesan evenly on top of the pasta mixture. Cover the skillet with a lid and let it sit on low heat for 2-3 minutes until the cheese melts.
  7. Season and Serve: Season with salt and black pepper to taste. Toss gently to combine, then serve the dish hot for a delicious and comforting meal.

Notes

  • Use Italian sausage with or without casings based on preference.
  • For extra flavor, add a pinch of red pepper flakes when sautéing garlic.
  • Fresh spinach can be substituted with baby kale or arugula if desired.
  • To make it lower in fat, reduce butter to 2 tablespoons and use part-skim mozzarella.
  • Leftovers taste great reheated in a skillet with a splash of olive oil to loosen the sauce.
