Ingredients

Scale

Pasta

  • 8 oz Rotini Pasta (Use gluten-free pasta)

Vegetables

  • 1 cup Cherry Tomatoes (Halved or substitute with grape tomatoes)
  • 1 cup Cucumbers (Diced, can substitute with bell peppers)

Meats and Cheese

  • 1 cup Pepperoni (Sliced, turkey pepperoni optional)
  • 1 cup Mozzarella Cheese (Shredded, or use vegan cheese)
  • 1/2 cup Parmesan Cheese (Grated, optional or use nutritional yeast)

Dressing

  • 1 cup Ranch Dressing (Or yogurt-based dressing)
  • 2 tbsp Olive Oil (Extra virgin recommended)
  • Salt (To taste, for seasoning)
  • Pepper (To taste, for seasoning)

Instructions

  1. Cook Pasta: Cook rotini pasta according to package instructions until al dente, about 8-10 minutes. Drain the pasta and rinse it under cold running water to stop the cooking process and cool the pasta.
  2. Combine Ingredients: In a large mixing bowl, gently mix together the cooled pasta, halved cherry tomatoes, diced cucumbers, sliced pepperoni, shredded mozzarella, and grated Parmesan cheese until everything is evenly distributed.
  3. Prepare Dressing: In a small bowl, whisk together the ranch dressing and olive oil until well combined. Taste the mixture and season with salt and pepper as desired to suit your preference.
  4. Toss Salad: Pour the creamy dressing over the pasta salad mixture. Use a large spoon to toss all ingredients thoroughly, making sure every bite is well-coated with the dressing.
  5. Chill: Refrigerate the pasta salad for at least 30 minutes before serving to let the flavors meld beautifully, enhancing taste and texture.
