For the Beef:
- 2 pounds beef chuck roast, cut into 2-inch pieces
- Fine sea salt and freshly-ground black pepper
- 2 tablespoons all-purpose flour
- 3 tablespoons olive oil, divided
For the Broth:
- 1 large white onion, diced
- 5 cloves garlic, minced
- 8 cups beef stock, divided
- 2 sprigs fresh thyme
- 1 large bay leaf
For the Noodles:
- 12 ounces wide egg noodles
Instructions
- Brown the beef: Add beef, salt, pepper, and flour to a bowl. Brown beef in oil. Set aside.
- Sauté the veggies: Sauté onion and garlic. Add beef, stock, thyme, and bay leaf.
- Simmer: Simmer covered for 2.5 hours.
- Shred the beef: Remove beef, shred, discard herbs.
- Cook the noodles: Boil stock, add noodles, cook until al dente.
- Season: Stir shredded beef into noodles. Season to taste.
- Serve: Garnish with pepper and serve hot.
