For the Chicken Burgers:
- 1 lb ground chicken
- 1 small red bell pepper
- 1 cup chopped spinach
- 1/2 red onion, chopped
- 1 tbsp chopped dill
- 2 cloves garlic, minced
- 1 tbsp Mediterranean citrus seasoning mix
For the Tzatziki Slaw:
- 1/4 cup mayo
- 2 tbsp greek yogurt
- 2 tbsp chopped dill
- juice of 1/2 lime
- 1 clove garlic grated
- 1/4 cup chopped scallions
- 1/2 cucumber grated, squeeze out all the extra liquid
- salt and pepper to taste
- 1/2 bag of coleslaw mix
For Serving:
- Buns of choice
- Hummus of choice
Instructions
- Prepare the Chicken Burgers: In a large bowl, combine the ground chicken, red bell pepper, spinach, red onion, dill, minced garlic, and Mediterranean citrus seasoning mix. Form into patties.
- Grill the Chicken Burgers: Preheat the grill to medium-high heat. Cook the patties for 5-6 minutes per side or until internal temperature reaches 165°F (74°C).
- Rest and Assemble: Let the patties rest. In a separate bowl, combine ingredients for the Tzatziki Slaw. Toast the buns, spread hummus, add the burger, and top with the slaw.
