Description

Potatoes:

  • 4 large Yukon Gold Potatoes

Seasoning:

  • 1/2 teaspoon garlic powder

Toppings:

  • 1/2 cup fresh parsley (finely chopped)

Instructions

  1. Preheat the oven: Preheat the oven to 425 degrees Fahrenheit.
  2. Prepare the potatoes: Wash the potatoes, leaving the skins on, and cut them into 1/3-inch wide sticks. Soak in cold water for 10-15 minutes, then drain and dry thoroughly.
  3. Season the fries: In a mixing bowl, toss the fries with olive oil, salt, oregano, dill, black pepper, and garlic powder.
  4. Bake: Spread the seasoned fries on a baking sheet lined with parchment paper. Bake for 15 minutes, flip them, and bake for an additional 6-8 minutes until crisp and golden.
  5. Finish and serve: Transfer the fries to a serving plate, sprinkle with parsley, red onion, and feta cheese. Serve with optional toppings like tzatziki, aioli, or lemon wedges.
