Turkey Mixture

  • 1 pound extra lean ground turkey (can use higher fat for more flavor/moisture)
  • 1 small yellow onion, diced
  • 1 large green bell pepper, diced
  • 1 large red bell pepper, diced
  • 2 tablespoons chili powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons cumin
  • 2 teaspoons garlic powder
  • 1 ½ teaspoon salt (more or less to taste)
  • 1 teaspoon pepper
  • ¼ cup water or broth

Instructions

  1. Heat skillet: Spray a large nonstick skillet with cooking spray and heat it over medium to medium-high heat to prepare for cooking the turkey mixture.
  2. Cook turkey and vegetables: Once the skillet is hot, add the ground turkey, diced onion, and diced green and red bell peppers along with the spices (chili powder, smoked paprika, cumin, garlic powder, salt, and pepper). Cook, breaking up the meat as you go, until the turkey is no longer pink and the vegetables are tender.
  3. Simmer with water: When the meat is almost fully cooked, stir in ¼ cup of water or broth and let the mixture simmer until it thickens, which helps keep the turkey moist.
  4. Season and serve: Taste the taco filling and adjust seasoning if needed. Serve with your choice of taco shells or as lettuce cups and garnish with toppings like shredded lettuce, cheese, pico de gallo, Greek yogurt, salsa, beans, corn, and cilantro.

Notes

  • Because these are low in fat, they won’t be as tender as beef tacos; the addition of water helps keep the turkey moist.
  • The recipe can easily be doubled or adjusted to serve more people.
