For the Chicken:
- 1.5 lbs boneless, skinless chicken breasts (about 3 large chicken breasts OR 1.5 lbs chicken cutlets)
- ½ cup whole wheat flour
- 3 large eggs
For the Coating:
- 1.5 cup shredded mozzarella
- 1.5 cups marinara sauce
- 1 cup whole wheat bread crumbs (unseasoned)
- ½ cup parmesan cheese
- ¼ teaspoon pepper
- 2 teaspoons dried basil
- 2 teaspoons dried parsley
Instructions
- Butterfly and Pound the Chicken: Slice the chicken breasts in half lengthwise and pound them until they are about ¼ inch thick.
- Preheat the Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Prepare Bowls: Set out 3 large shallow bowls.
- Coating Process: In the first bowl, add whole wheat flour. In the second bowl, whisk eggs. In the third bowl, mix bread crumbs, parmesan cheese, pepper, basil, and parsley.
- Coat the Chicken: Dip each chicken cutlet in flour, then egg, then the bread crumb mixture. Repeat for all cutlets.
- Bake: Place breaded cutlets on the baking sheet and bake at 425°F for 15 minutes, flip, and bake for another 15 minutes.
- Top and Broil: Top each cutlet with tomato sauce and mozzarella, then broil for about 2 minutes until the cheese is melted.
- Serve: Serve over pasta or a salad.
