Ingredients
Scale
Wet Ingredients
- 1 cup almond butter (natural, unsweetened)
- 1/3 cup maple syrup
- 1 tsp vanilla extract
Dry Ingredients
- 1/2 cup chocolate protein powder
- 1/2 cup cocoa powder (unsweetened)
- 1/2 cup rolled oats
- Pinch of salt
Toppings
- 2 tbsp rainbow sprinkles (plus extra for topping, optional)
Instructions
- Combine Wet Ingredients: In a large mixing bowl, stir together the almond butter and maple syrup until fully combined and smooth. Add the vanilla extract and a pinch of salt to enhance the flavor.
- Add Dry Ingredients: Mix in the chocolate protein powder, unsweetened cocoa powder, and rolled oats. Stir thoroughly until the mixture forms a thick, sticky, and moldable dough. Use your hands if needed for thorough mixing.
- Add the Sprinkles: Fold in 2 tablespoons of rainbow sprinkles evenly throughout the dough to add color and texture that mimics classic cosmic brownies.
- Roll Into Balls: Scoop out 1 to 1.5 tablespoons of dough and roll into bite-sized balls. Place them on a tray or plate lined with parchment paper. Optionally, sprinkle extra rainbow sprinkles on top and gently press them in.
- Chill: Refrigerate the bites for at least 30 minutes to let them firm up, or place in the freezer for about 15 minutes for a faster set. Once firm, the bites are ready to enjoy.
Notes
- You can double the batch and freeze half for busy weeks.
- Sprinkles are optional but highly recommended for the full cosmic brownie vibe.
- Adjust sweetness according to taste by adding more or less maple syrup.
- Use room temperature almond butter for easier mixing.
- If dough feels too dry, add 1–2 teaspoons of water or more maple syrup.
- Chill dough before rolling if too sticky.
- Roll bites gently to maintain shape and press sprinkles carefully to prevent falling off.
