  • 3 tbsp almond milk
  • 1 tbsp maple syrup

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the pot pies later.
  2. Sauté Aromatics: In a medium saucepan or cast-iron cocotte, melt the vegan butter over medium heat. Add diced onion, minced garlic, and a pinch of salt. Sauté for about 5 minutes until the onions caramelize. Add the maple syrup and continue to sauté for another 1-2 minutes to enhance sweetness and flavor.
  3. Add Vegetables: Stir in the quartered mushrooms and finely diced carrot. Sauté for 5-7 minutes until the vegetables soften and release moisture.
  4. Deglaze the Pan: Pour in the soy sauce and balsamic vinegar to deglaze the pan, scraping up any brown bits from the bottom to incorporate rich flavors.
  5. Thicken the Filling: Mix the flour with 2 tablespoons of water to create a slurry, then add it to the pan. Stir well to combine and let it cook for a minute while stirring. Add the ground black pepper and vegan pesto, mixing thoroughly to incorporate the pesto’s herby notes.
