- 2 tbsp honey
- 1 tsp pure vanilla extract

Instructions
- Preheat the Oven: Set your oven to 360°F (180°C).
- Mix Wet Ingredients: In a large bowl, whisk together egg, honey, Greek yogurt, vanilla extract, and olive oil.
- Combine Dry Ingredients: Add flour, protein powder, baking powder, and baking soda to the wet mixture. Mix gently until just combined.
- Add Blueberries: Fold in blueberries carefully to avoid crushing them.
- Bake: Spoon batter into lined muffin pan and bake for 15-20 minutes.
- Cool and Serve: Let muffins cool in the pan before transferring to a wire rack.
