  • Total Time: 35 minutes
  • Yield: Approximately 20 servings (about 1 ¼ cups) 1x
  • Diet: Vegan

Description

This Homemade Vegan Honey recipe offers a plant-based alternative to traditional honey, using apple juice, sugars, and natural flavors to create a sweet, honey-like syrup perfect for sweetening teas, toast, and desserts. It simulates the taste and consistency of honey without involving any animal products, making it ideal for vegans and those seeking a natural sweetener.

Ingredients

Scale

Vegan Honey Ingredients

  • 360 ml cloudy apple juice (apple cider in US)
  • 150 g granulated sugar
  • 75 g raw cane sugar
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons lemon juice
  • 1 chamomile tea bag

Instructions

  1. Combine Ingredients: Add the cloudy apple juice, granulated sugar, raw cane sugar, apple cider vinegar, lemon juice, and chamomile tea bag to a saucepan. Stir gently to mix the ingredients.
  2. Bring to Boil: Place the saucepan on medium-high heat and bring the mixture to a boil, stirring occasionally to help dissolve the sugars completely.
  3. Simmer Rapidly: Lower the heat slightly to maintain a rapid simmer and cook for 15 minutes, allowing the mixture to reduce and thicken.
  4. Simmer Gently: Reduce the heat to medium to maintain a regular simmer and continue cooking for another 15 minutes, ensuring the volume reduces to approximately 290 ml or around 1 ¼ cups.
  5. Jar and Cool: Remove the chamomile tea bag carefully, then transfer the hot vegan honey syrup into a sterilized jar. Allow it to cool to room temperature before sealing the jar tightly for storage.

Notes

  • Use cloudy apple juice or apple cider for best flavor and thickness.
  • Granulated sugar aids in sweetness and helps achieve the desired syrup consistency.
  • Raw cane sugar adds depth of flavor and a subtle caramel note.
  • Apple cider vinegar and lemon juice add acidity to balance sweetness and mimic honey’s tang.
  • Chamomile tea bag infuses subtle floral notes enhancing the honey-like taste.
  • Ensure the jar is sterilized to avoid contamination and prolong shelf life.
