The dessert features a root beer gelatin base topped with a smooth, creamy gelatin ice cream layer, offering a no-melt way to enjoy the iconic float flavor in a fun jiggly form.

Ingredients

Scale

Root Beer Layer

  • 2 envelopes Knox gelatin (Approx. 4 tsp total)
  • 1/2 cup cold water
  • 1/2 cup boiling water
  • 1/2 cup sugar
  • 2 cups Root Beer (Use a high-quality brand like A&W or Barq’s)

Ice Cream Layer

  • 3 envelopes Knox gelatin (Approx. 6 tsp total)
  • 1/2 cup cold water
  • 1 cup boiling water
  • 1/4 cup sugar
  • 2 cups Vanilla Ice Cream

Instructions

  1. Prepare the Root Beer Gelatin: Sprinkle the 2 packets of gelatin over 1/2 cup of cold water and let it sit for about 5 minutes to absorb and soften. Pour 1/2 cup of boiling water over the gelatin and stir until fully dissolved.
  2. Add Sugar and Root Beer: Stir in 1/2 cup sugar until completely dissolved, then add 2 cups of root beer and mix gently to combine.
  3. Set Root Beer Layer: Pour the root beer gelatin mixture into a 9×13-inch baking dish and refrigerate for at least 4 hours, or until fully set.
  4. Cut and Transfer Root Beer Cubes: Once set, cut the root beer layer into cubes and transfer them into an 8×8-inch baking dish. Keep refrigerated while preparing the ice cream layer.
  5. Prepare the Ice Cream Gelatin: Sprinkle 3 packets of gelatin over 1/2 cup cold water and let it sit for 5 minutes until absorbed. Pour 1 cup boiling water over it and stir until dissolved. Add 1/4 cup sugar and stir until dissolved, then set aside.
  6. Melt the Ice Cream: Place 2 cups of vanilla ice cream in a small pot and melt it over medium heat on the stove or microwave in short bursts until liquid but not boiling.
  7. Combine Ice Cream and Gelatin: Stir the melted ice cream into the gelatin mixture thoroughly. Allow the mixture to cool to room temperature but do not let it set.
  8. Assemble and Chill: Pour the cooled ice cream gelatin mixture over the root beer cubes in the 8×8-inch dish. Refrigerate overnight to set completely.
  9. Serve: Cut into cubes and serve chilled for a fun, no-melt root beer float jelly treat.

Notes

  • Use high-quality root beer such as A&W or Barq’s for the best flavor.
  • Ensure the ice cream mixture is cooled to room temperature before pouring over the root beer cubes to prevent melting.
  • Refrigerate overnight for best texture and flavor fusion.
  • You can serve this dessert as cubes on their own or with additional whipped cream on top for extra indulgence.
  • Store leftovers covered in the refrigerator and consume within 3 days for optimal freshness.
